We get asked all of the time by our family and friends for healthy food ideas. We love sharing our passion for great meals but one thing that often gets overlooked is the appetizer or snack side of the foodie love. Today, we want to share a recipe for one of our favorite snacks that serves as a great condiment too. Hummus. You can eat it on pitas, veggies, top your salads with it and spread it on your favorite sandwich. It is just plain good. And super easy to make.
- 2 cups canned garbanzo beans, drained
- 1/3 cup tahini
- 1/4 cup lemon juice
- 1 teaspoon salt
- 2 cloves garlic, halved
- 1 tablespoon olive oil
- 1 pinch paprika
- 1 teaspoon minced fresh parsley
Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.
Added note: I also like to mix in 1 t of chili or chipotle seasoning to mine to give it a fun zing of flavor.
